One issue might be with your "on" time. Injectors operate with tens of millisecond timings and the fuel pump and pressure accumulator on the fuel rail are designed to keep a pressure of about 50-60psi on the rail. If you have an injector open for very long your rail pressure may drop some but shouldn't be much of an issue for your simple demo purposes. The spray pattern for the injectors is a fine mist, not a stream. A stream would not get good atomization of the charge in the incoming air. So basically expect to see a fine puff of mist from the open injector. Not quite as appealing as the lawn sprinkler you may have been thinking of. Sounds basically reasonable.
